ANDI'S TORTELLINI SOUP
Prep time: 10 minutes Cook time: 15 minutes Serves 2-4
THE MAKINGS
1 lb Italian Sausage
5 oz crimini mushrooms, sliced
1/2 white onion
5 cloves of garlic
1 jar pasta sauce
15-30 oz of chicken broth, adjust to taste
1 box of Trader Joe’s Tortellini
3 handfuls of kale
Parmesan Rhine
THE METHOD
Large pot or Dutch oven over Medium. Add olive oil. Garlic and onions for two minutes. Add sausage and mushrooms stir until fully cooked
Tip: if things start to stick, add a little oil to the pan.
Add sauce and broth, stir
Add tortellini, kale & rind
Rip: make sue to remove the tougher spines, they’re not fun to chew
Let simmer until tortellini is cooked and kale is tender
