ANDI'S TORTELLINI SOUP

 

Prep time: 10 minutes Cook time: 15 minutes Serves 2-4

THE MAKINGS

  • 1 lb Italian Sausage

  • 5 oz crimini mushrooms, sliced

  • 1/2 white onion

  • 5 cloves of garlic

  • 1 jar pasta sauce

  • 15-30 oz of chicken broth, adjust to taste

  • 1 box of Trader Joe’s Tortellini

  • 3 handfuls of kale

  • Parmesan Rhine

THE METHOD

  • Large pot or Dutch oven over Medium. Add olive oil. Garlic and onions for two minutes. Add sausage and mushrooms stir until fully cooked

    • Tip: if things start to stick, add a little oil to the pan.

  • Add sauce and broth, stir

  • Add tortellini, kale & rind

    • Rip: make sue to remove the tougher spines, they’re not fun to chew

  • Let simmer until tortellini is cooked and kale is tender
