BUFFALO SWEET POTATOES

THE MAKINGS

  • 2 sweet potatoes – washed

  • 1 can of garbanzo beans

    • OR 1 lb chicken – chopped in bite-size pieces

  • ½ bulb of garlic – finely chopped

  • Buffalo sauce

  • Greek Yogurt

  • Ranch packet (or make your own ranch seasoning if you’re really professional)

THE METHOD

  1. Preheat oven to 400* Poke sweet potatoes with a fork all over. Cover with olive oil. And let bake for 40-50 minutes, until able to easily press fork through to the middle

  2. While the sweets are baking, in a deep pan over medium-low heat, add olive oil and garlic, cook until fragrant

  3. Bring heat to low, add chickpeas and buffalo sauce. Mix and cover with a lid. Let simmer for about 5-7 minutes

  4. Plate the potato, cut it down the middle, and mash, layer with chickpeas, and Greek ranch.
