BUFFALO SWEET POTATOES
THE MAKINGS
2 sweet potatoes – washed
1 can of garbanzo beans
OR 1 lb chicken – chopped in bite-size pieces
½ bulb of garlic – finely chopped
Buffalo sauce
Greek Yogurt
Ranch packet (or make your own ranch seasoning if you’re really professional)
THE METHOD
Preheat oven to 400* Poke sweet potatoes with a fork all over. Cover with olive oil. And let bake for 40-50 minutes, until able to easily press fork through to the middle
While the sweets are baking, in a deep pan over medium-low heat, add olive oil and garlic, cook until fragrant
Bring heat to low, add chickpeas and buffalo sauce. Mix and cover with a lid. Let simmer for about 5-7 minutes
Plate the potato, cut it down the middle, and mash, layer with chickpeas, and Greek ranch.
